Ingredients
• 4 large eggs
• 400g can condensed milk
• 4 limes, juiced & 2 teaspoons lime zest
• 1 ready made pie base
Instructions
1. Preheat the oven to 180C.
2. In a bowl, with an electric mixer, beat the egg yolk until they are thick and turn pale yellow.
3. Turn the mixer off and stir in the condensed milk.
4. Turn the speed to low and mix in half the lime juice.
5. Once the juice is incorporated, add the other half of the juice and the lime juice and the lime zest and mix to combine.
6. Pour the mixture into the pie base and bake until set, about 15 minutes.

Optional: Serve With Whipped Cream Or Lightly Dusted With Icing Sugar.
