Scrumptious meals to make at home

Chicken Salad 

Serves 4

– 500g cooked chicken breast, shredded

– 1 large apple (235g), julienned

– 2 celery stalks (60g), chopped

– ½ cup (125ml) sour cream

Combine all ingredients in a large bowl and season.  Mix well. Chill before serving in a fresh crisp lettuce leaf.

Optional: Add a few chopped walnuts for that ‘Waldorf Salad’ effect and a nice crunch.

 

 

Choc-Banana Ice Cream 

Serves 6

 

– 4 x 150g bananas, sliced and frozen

– 4 tablespoons (60g) raw cacao powder

– 1 cup (250ml) coconut milk

Place all the ingredients in a food processor or blender and puree.

Serve immediately for a rich, creamy all-natural chocolate soft serve, or pour the mixture into a loaf tin lined with baking paper, cover with cling wrap and freeze for at least 4 hours or until set.
